OLD-FASHIONED BREAD STUFFING

1 cup finely chopped celery
½ cup chopped onion
½ cup butter
1 teaspoon poultry seasoning
8 cups dry gluten-free bread
1 cup chicken broth or water
In a small saucepan cook celery and onion in butter until tender but not brown. Remove from heat. Stir in poultry seasoning and add ¼ teaspoon of pepper and ¼ teaspoon of salt.
Place dry bread cubes in a bowl. Add onion mixture. Drizzle with enough broth or water to moisten, tossing lightly. Use to stuff one 8- to 10-pound turkey. Makes 8 to 10 servings.
