Packed with protein, Lacy says this is her go-to dish that can be served any time of the day. She loves the recipe’s versatility and will use different veggies, cheeses, and spices depending on her mood. Plus, Dalton likes how the dish can be reheated in the microwave for a quick meal.

2/3 cup whole cream
Dozen eggs (or Egg Beaters)
Green onions
2 cups cheese
2 onions
Mushrooms
Peppers
Dash of sherry
Optional: salt and pepper, basil, sundried tomatoes, etc.

Whisk together eggs, cheese, sautéed veggies, cream, and spices and pour into a greased 9-inch x 13-inch pan. To reduce total baking time, Dalton covers the dish with plastic wrap and microwaves for 7 minutes. She then replaces the plastic wrap with foil and transfers it to a 375 degree F oven for 25 to 30 minutes, or until it’s “not jiggly anymore.” During the last few minutes of baking, Dalton tops the dish with additional cheese and a sprinkle of paprika for color.
