GRILLED BEEF TENDERLOIN
WITH FINIDINI SAUCE
(Francy Royer uses locally sourced ingredients whenever possible, including the beef tenderloin used in this Ruby Mountain specialty. Serve ¼ to ½ pound of meat per person.)
Beef Preparation
Rub one well-trimmed whole beef tenderloin with 3 tablespoons of olive oil and 1 tablespoon of kosher salt. This can be done early on the day of cooking.
Finidini Sauce
1/3 cup extra-virgin olive oil
1 cup soy sauce
Juice from 2 fresh limes
2 teaspoons balsamic or red wine vinegar
1 tablespoon rice wine vinegar
2 teaspoons crushed red chili pepper
1 thinly sliced medium red onion
Mix all ingredients together, adding onion last to marinate.
Grill tenderloin on medium heat. Cook to desired preference.
Slice and serve with Finidini Sauce and garnish with marinated red onions.
