Cilantro-lime slaw
(yields 2 cups)
⅔ cup red cabbage, shredded
⅔ cup Napa cabbage, shredded
⅔ cup red cabbage, shredded
⅔ cup carrots, shredded
⅓ bunch cilantro, chopped
2 scallions, sliced thinly
Juice of 1 lime
1 tablespoon rice vinegar
Salt, to taste
Combine all ingredients in mixing bowl and toss to coat. Allow to sit for 5 minutes before serving.
