For the past 10 years, executive pastry chef Kayline Johnson has worked tirelessly with her team to sweeten up the lives of Atlantis Casino Resort Spa’s guests. From the early days studying her craft in Portland, Ore., at the Western Culinary Institute, to her tireless hours in the Atlantis’ bakery, she now shares her lifelong passion for baking with countless diners at all of the resort’s restaurants.
Beyond the scrumptious array of sweet treats found throughout the property, a bevy of banquets at the Atlantis keeps her team mixing up cookies bearing logos, while outside cake orders come in steadily as well.
Her favorite item coming out of the bakery is the eight-pound cheesecake created here, which consistently receives rave reviews. Four hours are needed to bake the mouthwatering masterpiece, of which pastry chefs make a literal ton some days. Another of Johnson’s beloved desserts is the chocolate mousse cake served in the buffet.
Since as far back as kindergarten, Johnson has been winning awards for her baked goods and decorating. Her most recent acclaims are being named Pastry Chef of the Year by the High Sierra Chefs Association in 2015, and Woman of Achievement by the Nevada Women’s Fund in 2018.
She spends hours in the bakery to delight the taste buds of diners resort-wide. Seeing people’s faces light up when eating her creations is her favorite part of the job.
“It’s challenging, but we like to stay a step ahead of other places,” Johnson says.
