Learn to make several varieties of the popular Japanese dish in this hands-on class. To a base of vinegared rice with a little sugar and salt, add seafood — often raw — and vegetables. Make California rolls with avocado, cucumber and lump crab meat; Rainbow rolls, a California roll with fresh fish on top; and Philadelphia rolls with smoked salmon, cream cheese, crunchy cucumber and pickled red onions. $50 materials fee
