Charlie Palmer Bloom Dinner

The evening begins with an intimate cocktail hour from 6 to 7 p.m., where guests will enjoy handcrafted cocktails and delectable appetizers in an intimate setting. Musician Eric Anderson will set the mood with a live performance, creating a relaxed atmosphere as guests mingle and savor the delicious offerings.

The evening’s menu highlights the bright, fresh flavors of spring, beginning with a duck confit salad, featuring tender duck confit with spring leeks, toasted walnuts and radish, dressed in a parmesan vinaigrette. This starter is paired with Schramsberg Sparkling Brut Rosé MV, a delicious sparkler featuring a fruitful, complex and dry profile.

Next, guests will savor grilled Catalan prawns—tiger prawn brochette served over ajo blanco with delicate olive oil pearls. The dish is complemented by the Bricoleur Sauvignon Blanc 2022, whose bright acidity enhances the prawns’ fresh flavors.

The third course showcases herb-seared grouper, accompanied by a vibrant spring vegetable fricassée and finished with a fragrant gremolata. Paired with a Limestone Chardonnay 2022, a refined white wine that brings out the dish’s delicate citrus and herbaceous notes.

For the main course, guests will indulge in a black pepper-crusted filet mignon, served alongside escalivada—a smoky Catalan-style roasted vegetable dish—and roasted fingerling potatoes. This robust and flavorful entrée is paired with a Bricoleur Pinot Noir 2021.

To conclude the evening, guests will delight in a rhubarb frangipane tart, served with fresh strawberries, amaretto cream and a scoop of vanilla bean ice cream. The dessert is elevated with a glass of Bricoleur ‘The Last Note’ Late Harvest 2021, a sweet and aromatic wine that provides a perfect ending to the evening.
