Avocado Black Bean Salad
Servings: 4 servings
Ingredients
- 2 avocados peeled, pitted, and diced
- 1 large ripe tomato chopped
- ยฝ cup sweet onion chopped
- ยฝ cup low-sodium black beans drained and rinsed
- ยผ cup fresh cilantro chopped
- 2 tablespoons olive oil
- Juice of 1 lime
- 1 clove garlic minced
- Salt and pepper to taste
Instructions
- In small bowl, make dressing: Whisk olive oil, lime juice, garlic, and salt and pepper (to taste). Set aside.
- In medium bowl, combine avocados, tomatoes, onion, black beans, cilantro, and dressing. Gently toss until everything is coated. Serve immediately or cover with plastic wrap for up to 12 hours.
