Avocado Black Bean Salad

Servings: 4 servings

Ingredients

  • 2 avocados peeled, pitted, and diced
  • 1 large ripe tomato chopped
  • ยฝ cup sweet onion chopped
  • ยฝ cup low-sodium black beans drained and rinsed
  • ยผ cup fresh cilantro chopped
  • 2 tablespoons olive oil
  • Juice of 1 lime
  • 1 clove garlic minced
  • Salt and pepper to taste

Instructions

  • In small bowl, make dressing: Whisk olive oil, lime juice, garlic, and salt and pepper (to taste). Set aside.
  • In medium bowl, combine avocados, tomatoes, onion, black beans, cilantro, and dressing. Gently toss until everything is coated. Serve immediately or cover with plastic wrap for up to 12 hours.
