Poached Pears 6 small pears
2 quarts water
5 ounces lemon juice
5 ounces honey
4 ounces ginger, peeled and sliced
8 each cinnamon sticks
2 teaspoons ground coriander
1 teaspoon ground nutmeg Combine all ingredients except pears in a pot.
Peel and core pears and add them to pot. Bring up to a simmer and continue to cook until just tender.
Turnip Dice 2 each large turnips Square off and dice turnips into ½ inch pieces. Cook in salted water 3 minutes or until just tender. Shock in salted ice water. Foie Gras Demi 4 ounces shallots, thin sliced
2 ounces garlic, coarse chopped
2 sprigs fresh thyme
¼ teaspoon black pepper
1 tablespoon canola oil
1 cup red wine
1 cup demi
Salt and pepper to taste
3 ounces fresh foie gras Sauté shallots and garlic in oil until golden brown. Add thyme, pepper, and wine and reduce to a syrup.
Add demi and bring up to a simmer.  
Strain into a blender.     Add foie gras and blend till smooth. Taste to adjust seasoning.
Dice the squash into ½ inch dice. Toss the diced squash in the oil with the fresh thyme leaves, salt, and pepper.
Bake at 350 degrees F in an oven-proof dish covered with foil for
15 minutes or until just tender.
Roasted Beet Dice 2 large beets
1 ounce canola oil
Salt and pepper to taste Wash beets and toss them in oil and season them liberally. Arrange on wrinkled up foil on a cookie sheet. Bake at 350 degrees F for 1.5 hours or until just tender. Cool in fridge.     Peel and dice ½ inch.    
         Timbale Presentation     12 ounces roasted beet dice
12 ounces roasted butternut dice
12 ounces blanched turnip dice
6 each poached pears
12 ounces foie gras demi
2 ounces whole butter
2 bunches broccolini  
Salt and pepper to taste Heat up the demi and hold warm. Blanch and shock broccolini . Microwave and hold warm diced veg. Sautéed pears in 1 ounce of butter. Warm broccolini  in hot water and toss in other ounce of butter. Season broccolini  with salt and pepper.     Use an entremet ring (or small spring-form pan) to secure all the diced vegetables into a circle. Place poached pear on top of that. Then put broccolini on top of that.
