Applewood-Smoked Bacon BLT with Drunken Fig Jam and Goat Cheese
(courtesy of Tom Marrin of Full Belly Deli in Truckee, serves 4) 27 pieces crispy applewood-smoked bacon (or more)
1 5-ounce pack Sierra Valley Farms arugula
2 heirloom tomatoes
1 pack Cypress Grove Purple Haze goat cheese
2 Full Belly Deli fresh-baked French rolls
12 ounces drunken fig jam (see below) Slice French roll into 2 pieces. Layer from bottom to top with bacon, tomato, arugula, and goat cheese. Spread 3 ounces of fig jam on the top piece of bread. Slice in half. Drunken Fig Jam 10 fresh Mission figs, halved
1 tablespoon lemon
2 tablespoons sugar
½ cup brandy Soak figs in lemon juice and brandy for ½ hour in medium saucepan. Add sugar and simmer for 45 minutes. Do not burn! Add mixture to food processor and blend until smooth. Serve.
