Coconut Granola Bars

Created for Edible Pedal 100 2012) 2½ cups old-fashioned oats
1 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon vanilla extract
4 ounces applesauce (we used fresh, chopped apples)
2 tablespoons flaxseed
¼ cup honey
1/3 cup light brown sugar
¼ cup pecans, slivered
¼ cup almonds, slivered
¾ cup shredded coconut Preheat oven to 325 degrees F. Prepare 9-by-13-inch jellyroll pan by lining with parchment paper or lightly coat with vegetable oil. In large mixing bowl, combine oats, flour, baking soda, vanilla, applesauce, flax seed, honey, and brown sugar. Stir in nuts and coconut. Press into prepared pan. Bake for 20 minutes. Cut into 24 bars. Keep in pan until they have completely cooled.
