The carnival squash is a hybrid between sweet dumpling and acorn squashes. Enjoy it roasted with butter and brown sugar, or even stuffed with apple and thyme. To roast, preheat oven to 400 degrees F, cut in half, cleaning out seeds and strings. Coat each half with a sprinkle of salt and a little butter or high-heat oil. Bake about an hour or until squash is left soft all the way through.
